Springwells is a traditional and artisan smokehouse situated in the ancient cathedral town of Dunkeld on the banks of the River Tay, one of Scotland's most famous salmon rivers. The smokehouse was established over 30 years ago primarily to smoke anglers' own fish. We still provide that service today and on Sundays during the season there is a steady stream of anglers bringing in the fish they have caught during the week.

As a small producer, we can take the time necessary to produce high quality smoked salmon: quality which has been recognised by several Gold Awards over the last few years, from the Fine Food Retailers Great Taste Awards. We believe simplicity is best - we focus all our energies on producing a small, but outstanding range of smoked salmon products which is why many believe our salmon is the best you can buy.

As well as ordering by mail or on-line, you can purchase our delicious smoked salmon from the smokehouse shop here in Dunkeld. The Hat in the Cat is a Social Enterprise supported by the Social Economy Partnership and we are deeply committed to both social inclusivity and eco-friendly principles. Our workshops are specifically designed to be accessible to the widest possible spectrum of abilities, and our raw materials will be sourced from small suppliers and woollen mills. Whenever possible we will make use of offcuts and other waste products rather than let them go to landfill.
